Red Onion Marmalade

Red onion marmalade is one of those recipes that feels fancy but is surprisingly easy to make. It’s rich, slightly sweet, tangy, and deeply savoury — perfect with cheese boards, burgers, roasted veggies, or even spread on a sandwich.

Ingredients
3 large red onions, thinly sliced
2 tbsp olive oil or butter
¼ cup brown sugar (or coconut sugar)
⅓ cup balsamic vinegar
¼ cup red wine (or apple cider vinegar for non-alcoholic)
1 tsp salt
½ tsp black pepper
Optional: 1 tsp fresh thyme or rosemary, finely chopped
Instructions
Slowly soften the onions
Heat oil or butter in a large pan over medium-low heat. Add the sliced onions and salt. Cook gently for 20–25 minutes, stirring occasionally, until the onions are soft and deeply caramelized.
Add sweetness and depth
Stir in the brown sugar and let it melt into the onions for 2–3 minutes.
Deglaze and simmer
Pour in the balsamic vinegar and red wine. Add pepper and herbs if using. Reduce heat to low and simmer for 15–20 minutes, stirring occasionally, until thick, glossy, and jam-like.
Cool and store
Let cool slightly, then spoon into a clean jar. The flavour deepens even more as it rests.
